Pubs, Bars & Nightclubs
Ice is an important part of any bar operation from the local pub to the trendiest cocktail bars and nightclubs. Having the right type of ice can make the difference between serving a good drink and an amazing one. Ice is an ingredient…. you need to treat it that way!
Have you ever been served a drink with white cloudy ice? That’s poor quality ice. It’s full of scale and impurities which can taint the flavour of the drink and can provide a bad experience for customers.
Great quality ice should be crystal clear and be aesthetically pleasing which enhances the drink or cocktail which it is served in.
Gourmet Supercube
Scotsman’s Gourmet Supercube ice is the most premium type of ice. Each iconic thimble shaped cube is formed individually in a horizontal evaporator tray. As the ice forms, scale and impurities drop out of the water before it freezes. The resulting cubes are very hard and very clear with a slow melt rate, making them the perfect choice for chilling premium drinks like a Scotch-on-the-rocks or G&T’s.
The thimble shape works well in the shaker. The lack of corners reduces the cube degradation during shaking resulting in a less diluted cocktail. Mixologists can create amazing drink combinations which can be replicated easily ensuing customers get the same drink every order.
Supercubes come in four optional sizes; small 8g, medium 19g, large 39g, and extra large 60g
Ice Mixology
Using the correct type of ice can make a good drink into a great drink. Ice makes up 50-60% of your finished drink, it’s an important ingredient, you need to treat it that way!
Scotsman has created a guide to ice and it’s importance in mixology.
Nugget Ice
Nugget ice is made from flake ice which is compressed and forced through a die plate. The resulting nuggets of ice have an attractive cylindrical shape. This lends itself well to presenting cocktails.
Nugget ice is also great for filling ice buckets to rapidly cool bottles. Whether that’s a ‘bucket of beers’ or a bottle of vintage champagne, nugget ice crushes easily and surrounds the bottles completely, chilling them down quickly. This removes the need to pre-chill bottles, saving on valuable refrigeration space.
Crushman 360
If you’re looking for crushed ice in small quantities, the Crushman 360 can easily process even the SuperCube into granules in seconds. If you don’t need enough crushed ice to justify a second ice machine, it’s an ideal addition to your arsenal.
