Scotsman Ice Systems & Hubbard Systems will be exhibiting at this years coffee festival showcasing how ice is a vital addition to any coffee shop, with the help of Scotsman’s iced coffee expert Michalis Dimitrakopoulos. Visitors to Scotsman’s stand (SO4) will also get the chance to experience the new Legacy concept ice machine.

Designed as Scotsman’s vision of the future of ice machines, the legacy features an eye-catching design using black stainless steel, tempered glass and a special alloy finish.

Ice experts from Hubbard Systems, will be on hand to answer visitor questions.

FUNDAMENTALS

Tool: Cold Brew Tower

1 part Coffee

5 parts water

5 parts Gourmet SuperCube ICE

Serve in an Old Fashioned glass with XL Gourmet Supercube Ice

Tool: Chemex

18g filter ground coffee

120g Brew Water at 93ºC

160g Medium Gourmet SuperCube ICE in the bottom of the Chemex

Put the Medium Gourmet Ice cubes on the bottom of the Chemex. Moisten the paper filter with warm water, then put the coffee on the filter. Pour the water on the coffee.

Signature Recipe – Coffee Negroni

20ml Campari
20ml Red Vermouth
20ml Dry Gin
20ml Cold Brew Coffee
Scotsman Gourmet Supercube Ice

Pour all of the ingredients into a mixing glass with the Scotsman Gourmet ice and stir 400 times

Serve in an ‘Old Fashioned’ glass over a XL Gourmet Supercube and garnish with a twist of orange peel

Signature Recipe – Michalis’ Choice

30ml Cranberry Juice
40ml Rum
15ml Caramel Syrup
20ml Cold Drip Coffee
15ml Pineapple Juice
Scotsman Gourmet Supercube Ice for mixing
Scotsman Nugget Ice for presentation

Shake all of the ingredients with the Scotsman Gourmet ice.

Fill a High Ball glass with Nugget ice and strain over the mixed drink. Garnish with a wedge of fresh pineapple
